When the “Syntax highlight” option is unchecked, the default color for the code is some sort of orange / gold color. This is the same for any type of code (HTML, JS, PHP etc) and also stays the same when changing the User interface theme from Light to Pro Dark etc.

I went back and check this again and noticed that the “Plain Text” (was set to black) seems as though would be the likely color to use for any code when Syntax highlight was turned off - but it only appears to be working correctly when resetting the Plain text color.
Out of curiosity what version of macOS are you on?
I think I have this fixed for the next beta build.
