Is there a way to default text - E.g. size 25 Avenir #FFFFF. 50% of the time I create a new object (Text, rectangle etc), it seems to spawn somewhere really far down the page - mostly past the actual boundaries of the document. Is there a way to fix this?

No, but this is a long standing request we'd like to do.

I believe the behavior is that a new element should be created in the center of the viewport so it is always in view. If you have specific steps where this isn't happening let me know and I can file a bug to fix!
